? The experimental greenhouse provides a sheltered environment during the cold season for a variety of lettuce, spinach and herbs.
Lettuce are picked daily to be available at the salad bar at the Arcosanti Cafe throughout the year.

? In spring a large part of the effort in the greenhouse is devoted to the raising of seedlings. Varieties of tomatos, peppers, eggplant, squash, are waiting to be transplanted into the garden, as soon as the danger of frost has passed.
