The 2011 Italian Night at Arcosanti began dinner with the serving of hummus, olive oil, bread, olive spread, carrots, celery and other hors devours.

The café staff prepared large amounts of pasta to put into special Arcosanti wheelbarrows from which the delectable entrees would be served.
